Cold brew, the way the best cafés do it. Not coffee dunked in cold water overnight — this is ice drip, where near-freezing water falls one drop at a time through the grounds over several hours. The result is a brew you can't get any other way: deeply aromatic, silky smooth, naturally sweet, and almost free of the bitterness and acidity that hot brewing pulls out.
Watching it work is half the appeal — a slow, mesmerizing piece of equipment that earns its spot on the counter.
How it brews: The top glass chamber holds water and ice. As the ice slowly melts, it keeps the water near freezing through the whole cycle and gently dilutes it to the ideal strength. From there, water passes through an adjustable drip valve — you set the pace, with the classic sweet spot around one drop every 1 to 1.5 seconds. Each drop lands on a filter resting over a bed of medium-coarse grounds, spreading evenly so the water soaks through without carving channels. Hours later, the finished coffee collects in the glass carafe below: concentrated, clean, and ready over ice.
